Avocado with Citrus Fruits and Honey Dressing 蜜汁酸果鱷梨


1st Semester 西餐烹調實務 12.10.2011



Ingredient 材料                          Quantity 數量 
 Orange 柳丁                                               1 
 Grapefruit 葡萄柚                                      1 
 Avocados 鱷梨                                           1 
 Loccal Lettuce 廣東葉                             20 公克
 Lolla Rossa 蘿拉萵苣                             20 公克
 Radicchio 紫萵苣                                    20 公克
 Yellow Frisee 黃鬚萵苣 (菊苣)              20 公克 
 Honey Lemon Dressing  檸檬蜂蜜汁   120 公撮         

Method 作法                         
 1. 先將葡萄柚和柳丁去皮,取出每片的果肉
 2. 用刀將鱷梨從中間劃一圈,輕輕一轉,即可很輕鬆將籽取出,小心的將皮保持完整,取出果肉,再將鱷梨肉切成扇形,置於盤子左方
 3. 將洗好的萵苣葉置於鱷梨皮內,將柳丁和葡萄柚混以檸檬蜂蜜汁合後,放入鱷梨皮內,再將鑲好的鱷梨皮置於盤子右方
 4. 最後鱷梨淋上檸檬蜂蜜汁即可

Honey Lemon Dressing 檸檬蜂蜜汁
 Mayonnaise 美乃茲                   80 公克 
 Lemon Juice   檸檬汁                10 公撮 
 Honey   蜂蜜                              15 公撮
 Black Pepper Mill   黑胡椒碎     適量
