Baked Seabass with Pistuo Oil 羅勒烤鱸魚


1st Semester 西餐烹調實務 16.11.2011



Ingredient 材料                                                   Quantity 數量 
 Seabass Fillet 鱸魚菲力 (150公克/)                   600 公克 
 Zucchini Sliced 夏南瓜片                                         16  
 Tomatoes Sliced 蕃茄片                                            20 
 White Wine 白酒                                                       30 公撮
 Unsalted Butter 無鹽奶油                                         15 公克
 Onion Diced 洋蔥丁                                                  20 公克
 Spinach Leaves 菠菜葉                                           150 公克
 3 Roasted Clove Garlic已烤好帶皮蒜頭                   
 Pistuo Oil 蒜味羅勒油                                              50 公撮
For Pistuo Oil 蒜味羅勒油:
 Basil Finely Chopped 九層塔碎       公克
 Garlic Chopped 蒜碎                       10 公克
 Olive Oil  橄欖油                            50 公撮
 Salt / Pepper  /白胡椒粉                   適量

Method 作法
 1. 將魚菲力兩面煎後放入烤盤中皮朝上,
 2. 隨之即 在魚皮上面將蕃茄片與夏南瓜片,一片接一片 重疊好,
 3. 撒上白酒放入450°C的烤箱中烤約 8 鐘至熟。 
 4. 然後將洋蔥與奶油炒香再加入菠菜調味備用。 
 5. 將菠菜放在盤中隨之將魚放在菠菜上,在上面放已烤好的帶皮蒜頭,淋上蒜味羅勒油即完成。
