Beef Tartare served with Melba Toast 生牛肉餅附薄片吐司


1st Semester 西餐烹調實務 19.10.2011



Ingredient 材料                                                 Quantity  數量
 Onion Chopped  洋蔥碎                                        10 公克
 Capers Chopped 酸豆碎                                         公克
 Dill Pickled Chopped  茴香酸黃瓜碎                  10 公克
 Anchovies Chopped  小鯷魚碎                              公克
 Mustard  芥末醬                                                     公克
 Paprika  甜椒粉                                                         適量
 Parsley Chopped  荷蘭芹碎                     適量
 Beef Tenderloin Fine Diced 牛小里肌小丁   120公克
 Lemon Juice   檸檬汁                                          10 公撮
 Brandy   白蘭地                                                   10 公撮
 Worcestershire Sauce 辣醬油                                   適量
 Tabasco   辣椒水                                                      適量
 Salt 鹽                                                                    適量
 Pepper Mill  胡椒碎                                                 適量
 Ring Mould 7cm  圓模型 7公分                          
 Egg Yolk  生蛋黃                                                  
 Melba Toast  烤薄片土司                                     片 +butter & garlic, 烤箱200c,放進時調300c

Method 作法
 1. 將所有材料放入盆中混合拌勻。
 2. 再與牛肉混合調味。
 3. 把餡料填入模型,中間放入生蛋黃,附上烤薄 片土司。
